Corn-on-the-cob in January. Crazy, right?
We got five ears of corn in our Bountiful Basket this morning. Being the good wife and mother that I am (insert laughter here), I spent all afternoon cooking with our fresh veggies and fruit we'd gotten. It got quite chaotic with cookies baking, rice cooking, corn boiling, and beans simmering. Oh, and Jeff pineapple salsa-ing in the middle of everything.
But the payoff was not only a yummy new recipe (Black Beans and Rice with Chicken and Apple Salsa) and dessert but the chance to get to use these handmade corn-on-the-cob holders my Grandpa Jewkes made for Christmas. Aren't they ingenious? And check out the cool box that holds them, with it's sliding lid. The kids loved them.
